We present an easy version of a drink from a new drinks list. This is a batch premix that's loaded with the essence of a Christmas time, which makes it perfect for a celebration. Save the extra syrup you can use for morning drinks, puddings, or to make another batch of the drink.
The Bikini Cocktail
Serves 10 guests
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Put the listed ingredients in a saucepan, heat until it reaches a light boil, stirring until the sugar dissolves. After that, remove from the stove and leave to cool down entirely. Decant to a sealable bottle, cap it and store in the refrigerator, it can be stored for up to a month.
For the Batch Mix: Mix the specified liquids into a large bottle, let it rest for one hour, then strain , ideally through a fine cloth, to ensure it's fully clarified.
To serve: Add 85ml from the cocktail base to a cocktail shaker packed with ice, and stir carefully for a minute to cool it down. Pour to a cold coupe glass or equivalent, decorate with a few cranberries and finish by giving it a light spray of mandarin oil over the drink.
